Almond Chocolate Chunk Cookies

One day my son asked me to make some cookies and who could resist making fresh cookies? They make the house smell divine and then you get to enjoy them all ooey gooey out of the oven. So, I said yes and whipped up one of my favorites as they’re really easy to make and take only a few ingredients and time in the oven. Sometimes I like making regular chocolate chip cookies in the oven but theres other times I like these because there’s no flour in them so they’re a lot denser than most chocolate chip cookies. For those with gluten sensitivities, you have to try these!

Almond Chocolate Chunk Cookies
1 cup almond butter or any nut butter you have on hand
1 cup brown sugar or coconut sugar
1 egg
1 teaspoon baking soda
1/2 cup chocolate chips

Preheat oven to 350 degrees. Beat together almond butter, brown sugar, egg and baking soda with a hand mixer until smooth. Stir in chocolate chips by hand. Place big spoonfuls of dough onto a baking sheet and cook for 10-15 minutes. I like mine a little on the underdone side so I’m around the 10 minute mark. Cook them just until they’re golden brown. Let cool on a cooling rack and enjoy! These keep well in an airtight container for a couple of days.
