Avocado Egg Toast

Are your mornings filled with a little bit of chaos, rushing around and maybe some more than normal elevated voices? Haha! Mine, too! Especially now that school is back in session, we’ve been reminded of how difficult it is to get back into the swing of things. And I’m least excited about having to wake up early. Ugh!

What happened to late summer nights?

With this recipe you’ll have a leg up on quick and easy breakfast ideas!

Our mornings seem to jam easier when we have a few things prepped the night before (especially lunch made and outfits ready) and we bust out some of our favorite recipes that take little time to prep and stick with you all morning long.

Here’s our favorite breakfast that whips up in no time and everyone approves!

Avocado Egg Toast
1 slice multi-grain or gluten-free bread, toasted
1/2 avocado
1 egg
salt and pepper
Sprinkle of hot sauce or red pepper flakes
1/2 lemon

Toast up bread and set aside. Cook egg in 1 teaspoon butter on medium low heat and flip, cooking until yolks turn opaque. Mash up avocado and spread it on toast. Place your egg on top and add salt, pepper and red pepper flakes if using. Squeeze a little lemon on top and enjoy!
