BLT Bombs

I love BLT’s (Bacon Lettuce Tomato Sammies) but sometimes, don’t you just want to skip the bread? We recently visited Italy and the food there was amazing. I had some of the best pasta and bread I’ve ever had in my life. Seriously.

But, when I got home, I couldn’t look at any more bread. I think I was on carb overload.

So, one of the first recipes I made when we got back was this salad and, man, it hit the spot.

So good. If you’re looking for your next rad salad, then this recipe is for you.

BLT Bombs
½ pound bacon, chopped
1 cup greek yogurt (or do ½ cup greek yogurt ½ cup mayo for a little richer dressing)
¼ cup grated parmesan cheese
splash or two of milk
½ lemon, juiced
1 tablespoon chopped fresh herbs like parsley or chives
salt and pepper
romaine hearts or iceberg lettuce
½ tomato, chopped

1. Cook bacon over medium heat until crispy. Drain on paper towel.
2. Make dressing by mixing together yogurt, parmesan cheese, milk, lemon juice, herbs and salt and pepper until it reaches desired consistency.
3. Place bacon and tomatoes on top of your lettuce and drizzle with your dressing. Add some avocado to make it a BLAT Bomb. Enjoy!
