Chocolate Almond Butter Bites

My kids are crazy. When I first made these, my kids kept grabbing for one, taking them behind our bar and sneaking them like wild animals. I’d find smeared chocolate on the bar, the carpet and they’d be up at all hours of the night.

My husband and I had to hide them in a plastic container in the freezer to keep the kids from destroying our house.

And if my kids have a tiny bit of chocolate, they’re off the hook. Seriously. They’ll run around the house like mad men and tell us they’re not hyper as they’re running circles around us. It’s hilarious.

Warning — These balls are so good you might just want to sneak them too.

Chocolate Almond Butter Bites
3 tablespoons butter
1 12 ounce package of semi sweet chocolate chips
1 cup almond butter
1.5 cups almonds, finely chopped

1. Place butter in a small saucepan and melt over low heat.
2. Add chocolate and almond butter and whisk until smooth and melted through.
3. Pour mixture into an 8 inch square baking dish and place in fridge for 45 minutes or so until the mixture hardens.
4. Place chopped nuts on a large platter. Spoon teaspoons of chilled chocolate mixture into nuts and roll to cover all over.
5. Quickly roll in between your hands to form balls and place back in fridge to set. Enjoy!

Keep these in a sealed container in fridge or you can also toss these in the freezer if you don’t think you’ll eat them all within a few days.
