The easiest sweet potato recipe EVER

We eat a lot of Sweet Potatoes in my house. Like A LOT!

I steam them and toss them in the Vitamix for my 9 month old, we eat them for Breakfast, Lunch, or Dinner. Really. There’s no discriminating here.

And since Costco carries 10 pound bags of them (which I get every single time I go shopping because I freak out that we might have run out?!) I have to use them up and get creative on how I cook them.

Want to hear a simple kitchen hack to make Baked Sweet Potatoes in the Slow Cooker while you’re out at work with just ONE ingredient? YES! Just the Sweet potatoes?

You’re not gonna believe this actually works until you try it so read the recipe then go! ;)

AND this works with any type of potato. We just eat sweet potatoes a lot!

1. Scrub and rinse 4 sweet potatoes.

2. Toss them into your slow cooker wet.

3. Cover and cook on low heat for 6 to 7 hours until they’re fork tender.

4. Smother them with real butter if you like, salt and pepper and enjoy!

Then you can mash them or do what you like with your sweet potatoes.
