Here’s a sneak peek into a killer recipe for our next Live 10 Day Real Foods Challenge.

ONE PAN TACO SKILLET

Serves 4
Prep time 5 minutes
Cook time 20 minutes

Ingredients

  • 1 tablespoon evoo (extra-virgin olive oil)
  • 1 pound ground meat (beef, turkey, bison, chicken)
  • salt + fresh ground pepper, to taste
  • 1 small onion, chopped
  • 2 garlic cloves, finely chopped
  • 1 cup greens, chopped, such as kale, spinach, chard
  • 1 cup salsa
  • 2 – 3 leftover corn or flour tortillas, chopped

Directions

  1. In a large skillet, sauté ground meat in evoo over medium heat, breaking up with a wooden spoon. Season with salt and pepper. Cook for about 5-7 minutes, or until no longer pink.
  2. Add onion and garlic and cook another 5 minutes, or until onion starting to soften. Spoon off any excess grease.
  3. Stir in greens, salsa, ½ cup water and tortillas. Turn heat down to medium-low and simmer for about 5 minutes, just until the flavors combine and the greens are wilted. Add additional water if it starts to get thick on you.
  4. Taste and add additional salt and pepper, if needed. Enjoy!

Serving Suggestion :: Side salad and fresh fruit
