Fill Your Belly Soup – A Simple One Pot Meal

I’m obsessed with stress-free cooking.

I’ve got my three ring circus running around the house on most days so alone time in my kitchen is pretty non-existent.

It’s more of a sh*t show – figuring out how to keep the food from burning and putting out a fight amongst the chaos.

If you’re busy and feeling like you can’t even think about dinner right now and you just want to head over to the drive-thru, save yourself the chemicals and make this instead! ;)

FILL YOUR BELLY SOUP

Serves 4+

Prep time 10 minutes

Cook time 25 minutes

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 2 tablespoons evoo, extra-virgin olive oil
  • 1 carrot, chopped small
  • 1 stalk celery, chopped small
  • 1/2 bell pepper, chopped small
  • whatever leftover raw veggies you have on hand (about 2 cups) – cauli, broccoli, asparagus, mushrooms, etc.)
  • salt + fresh ground pepper, to taste
  • 4 cups chicken/beef stock, homemade preferably
  • 1/2 pound leftover cooked ground meat – turkey, beef, sausage, chicken
  • 1/2 can cooked beans, optional
  • 1/2 bunch kale or spinach, chopped
  • pinch fresh ground nutmeg
  • grated parmesan cheese, for topping, optional

Directions

  1. In a large soup pot over medium heat, add oil, onion, garlic, carrot, celery, bell pepper and any extra raw veggies you’re using.
  2. Add some salt and pepper and stir really well. Cook for about 5 minutes or until veggies start to soften and get some color on them.
  3. Pour in stock and bring to a boil. Turn heat back down to about medium-low and cook for 10-15 minutes, or until veggies are tender.
  4. Add in meat, beans and let cook 5 minutes. Stir in kale/spinach and cook another minute or two. Taste and add additional salt and pepper, if needed. Make sure veggies are tender and cook additional time if needed.
  5. Pour into bowls and top with grated cheese, if using. Enjoy!
