Goat Cheese Cakes

Yesterday we had our family over and I didn’t have much in the fridge to serve besides loads of veggies, goat cheese and ground nuts. So, I cut up a bunch of fresh veggies – bell peppers, zucchini, carrots and broccoli. Made a dip with just a little mayo and greek yogurt with fresh herbs, salt and pepper and made these appetizers the star of the show. They’re beyond simple to make and use one of my all time favorite cheeses – goat cheese. Everyone loved them so much that they asked me for the recipe. So here it is for you.

Looking for a killer appetizer or a fun and interesting bite to eat? You have to try this one. We eat them as a side, appetizer or when we have extra goat cheese and nuts in the fridge. They’re a hit at parties, too!!

Goat Cheese Cakes
1 log goat cheese, room temperature
2 cups ground nuts (pecans or walnuts work well)
1/4 cup evoo (extra virgin olive oil)

Preheat oven to 450 degrees. In two shallow dishes, place nuts in one and oil in another. Set aside. Cut the goat cheese into small discs about 1/2 inch thick. Dip each goat cheese disc into oil then into ground nuts. Making sure you coat them well with oil and nuts on both sides. Place on a rimmed baking sheet for about 5 minutes just until crispy and golden. Watch these carefully as they burn fast and they’re a mess to clean up. Serve with veggies, on top of a salad or just by themselves.
