Healthy Kid Approved Recipes For Back To School Are HERE!! :)

Do you feel like you’re in the kitchen, whipping up food, snacks, lunches, dinner, breakfast constantly?

Now that school’s back in session — and, we’re in full swing into the hustle and bustle of waking early, having a crazy chaotic morning, drop off, pick up, homework and FOOD — EASY SNACKS AND MEAL IDEAS couldn’t come any faster! 

To help you out, I’ve teamed up with my local Whole Foods Market (SCORE!! a HUGE dream of mine) and we hit the store with all three kiddos. Yes. All. Three.

We picked out some really awesome and EASY ideas for breakfast, lunch or dinner and snacks that are totally healthy, packed with lots of fresh veggies and the kids LOVE. #kidapproved 

Give these a try when you’re stuck in a rut or looking for ways to get your kiddos to eat more fresh fruits and veggies. Hope you enjoy! —–>

ANTS ON A LOG – RMK STYLE

Prep time 5 minutes

Cook time 0 minutes

Ingredients

  • Celery, chopped into 2-3 inch logs
  • Peanut or Nut Butter of your choice
  • Chia Seeds
  • Cranberries or
  • Goji Berries

Directions

  1. Spread a thick layer of peanut/nut butter onto celery. 
  2. Sprinkle with chia seeds.
  3. Place a few cranberries or goji berries into the nut butter so they stick.
  4. Enjoy!

ROCKIN’ MOM’S KITCHEN DIY TACO BAR

Serves 4

Prep time 10 minutes

Cook time 15 minutes

Ingredients 

  • 1 pound ground meat — beef, chicken or turkey 
  • 1 small onion, chopped
  • 1 carrot, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • salt and pepper

Directions

  1. Brown meat in a large skillet over medium heat for about 5 minutes. Break up with wooden spoon and discard any fat. Season with salt and pepper. 
  2. Add in onions and carrots and cook about 8 minutes, until onions are nice and soft.
  3. Add in cumin and chili powder and another pinch of salt and pepper. Stir well until meat is completely cooked through. Turn heat off and set aside.

*You can also use leftover ground meat or shredded chicken and skip this step entirely for an even quicker Taco Bar.

optional toppings/fixins – get creative here. Add what you and your family enjoys

  • 1/2 bunch kale or spinach, chopped
  • 1 cup grated cheese
  • 1 cup tomatoes, chopped
  • 1 can black beans, drained
  • 8-12 warmed corn or flour tortillas
  • 1/2 cup bell peppers, chopped
  • 1 avocado, sliced
  • fave hot sauce

Assembly Directions

  1. Place meat, spinach, cheese, tomatoes, beans, and any other toppings separately in their own bowls. 
  2. Keep tortillas warm by wrapping them in a kitchen towel.
  3. When ready to serve, have each person make their own taco by adding meat plus fave fixins to tacos. Hit it with hot sauce and enjoy!
  4. Tip*If packing this in a lunch, divide each ingredient and let kiddo/adult assemble when it’s time to eat to prevent getting soggy.

EASY 5 MINUTE GREEN SMOOTHIE

Serves 1

Prep time 5 minutes

Cook time 0 minutes

Ingredients

  • 1 cup fresh spinach or kale
  • 1/2 cup strawberries
  • 1/2 cup blackberries (or use any combo that you like
  • 1/2 cup grapes
  • 1/2 small carrot, chopped
  • about 1 cup water, add more if needed to get things moving
  • 1 teaspoon hemp hearts

Directions

  1. Place spinach, strawberries, blackberries, grapes, and carrot in a blender. Add in water and blend on high until nice and smooth. 
  2. Add in a couple pieces of ice to make it cold or use frozen berries.
  3. Pour into a large glass and top with hemp hearts. Get your sip on!
  4. *Tip*You can also blend this the night before and keep stored in the fridge. Then, shake it in the morning before you drink.
