Immune-Boosting Fennel and Orange Salad w/ Citrus Vinaigrette

Winter sniffles and coughs got you down?

This past week, I’ve been wiped out by a cough that won’t quit and the only thing that’s helping is green juices and killer salads like the one I’m gonna show you below.


New to fennel? It’s a white and pale green bulbous veggie with long green somewhat fuzzy stalks but sometimes you’ll find just then bulb at the store. Italians eat a lot of fennel in between meals because of its great ability to ease digestion.


Did you know FENNEL…

  • boosts your immune system with a ton of vitamin c
  • has antioxidant powers (anti-cancer effects)
  • is loaded with fiber and potassium that keeps things moving “smoothly”
  • helps keep mama and baby healthy from the high amounts of folate


Where? Fennel’s available in most regular grocery stores and farmers markets.
How? Cut the long tops from the round bulb and be sure to core the tougher middle section. Save the stalks for a quick and easy sauté and the fronds for garnish.
What? It’s a little licorice or anise flavor and super tasty. And you can eat it sautéed, braised or raw.

FENNEL & ORANGE SALAD w/ Citrus Vinaigrette
Serves 1-2
Prep time 5 minutes
Cook time 0 minutes

Juice from half a lemon
1 teaspoon Dijon mustard
About 1/8-1/4 cup evoo
Salt and pepper
Squirt of pure maple syrup if you like
2 teaspoons reserved fennel fronds (tops)

1 bulb fennel, cored, save a few teaspoons fennel tops for vinaigrette
1 heart romaine, chopped
1 orange, peeled and chopped
Handful sunflower seeds

1. In a bowl mix together vinaigrette ingredients. Adding more oil if needed.
2. Add remaining ingredients and stir well.
3. Taste and add additional seasoning as needed.
4. This salad’s the bomb right away but even better if you let it sit in the fridge for about an hour just to let the flavors combine. Enjoy!
