Killer Arugula & Pear Salad – My fave

Okay, so this is kinda one of those things that you can make and eat the entire bowl. Like for realz.

My kids despise arugula – it’s called “rocket” for a reason – because it’s hella spicy and has a peppery bite.

But, since visiting Italy a few times, my heart swoons over this nutritious green and it brings memories back for me.

So, I make it all the time.

Plus, it’s a fun one to try if you’re sick of eating kale and spinach. ;)


Here’s to eating greens, making kids try different things, and feeding yourself well this fall.

ARUGULA & PEAR SALAD
Serves 1 or 2
Prep time 5 minutes
Cook time 0 minutes

Ingredients
lemon juice
evoo
salt and pepper
tons of arugula
1 pear, sliced
1/2 cup toasted nuts
parmesan or romano cheese, shaved

Directions

  1. Simply whisk together lemon juice and evoo and sprinkle a bit of salt and pepper in the bottom of a large serving bowl.
  2. Add in arugula, sliced pear, nuts and cheese. The more cheese the better. Gently mix together.
  3. Taste and add additional salt and pepper as needed. Enjoy!
