Ravioli with Spinach and Bacon

Who doesn’t love bacon? I mean seriously.
Throw some bacon on top of pretty much anything and it’ll taste amazing. Right?

This recipes a keeper. And a trick I have? To bump up the green goodness even more, try using either a spinach and cheese filled ravioli or tortellini.

And before you say it, yes! I know. This looks like a lot of steps but they’re simple. So try it. It’s definitely worth it.

Ravioli with Spinach and Bacon
4 slices chopped bacon
1 pkg cheese ravioli or tortellini
1/2 cup cream
3 cloves garlic finely chopped
1 big handful spinach, chopped
3 tablespoons chopped parsley
1/4 cup grated parmesan cheese
zest from 1 lemon and juice from half
salt and pepper

1. Place bacon in a large skillet and cook over medium heat until crisp.
2. Take out with a slotted spoon and place on a paper towel to drain.
3. Toss all but 2 tablespoons of the bacon drippings and set aside.
4. In a large pot of boiling water, cook ravioli for about 2 minutes. Drain pasta but keep ½ cup pasta water.
5. In a saucepan, combine garlic and cream and cook for 2 minutes then turn off heat. Set aside.
6. Heat bacon drippings in the skillet over medium heat and add ravioli. Cook for 2-3 minutes or until golden brown then add cream sauce.
7. Add spinach, parsley, parmesan, lemon zest, juice and season with salt and pepper. Add a little of the pasta water while stirring just until the pasta is a nice consistency. Serve and enjoy.
