Yep. You guessed it. I use avocados all-the-time! They’re a total go-to in my house. They’re loaded with healthy fats (for shiny skin, hair and heart – yay!) and keep ya full all morning or afternoon long.
I created this recipe when I couldn’t look at another salad on my plate. Instead of rejecting them altogether, I had some fun with it and voila – here’s a new twist on loading up on greens.
So, if you can’t fathom eating another salad, check out this one. It’s a salad in an avocado boat! Yum.
Salad Stuffed Avocados
1 avocado, cut in half, deseeded and skin left on
1 cup mixed greens, chopped – spinach, kale, romaine, chard
3 tablespoons tomatoes, chopped
1/4 cucumber, chopped
2 tablespoons nuts, chopped
3 tablespoons crumbled cheese – blue, feta or goat
any other fix ins you like
2-3 tablespoons your favorite dressing – olive oil, lemon juice, balsamic vinegar
Place all ingredients in a bowl and toss lightly. Be sure that the lettuce and veggies are chopped well so it’ll all fit into the boats. Put a big mound of salad onto the boats and enjoy with a spoon. Scoop out as you go so you get some avocado with each bite.
