Simple Green Smoothies Recipe

My good friends Jadah and Jen over at Simple Green Smoothies launched a book. Woohoo!!

If you’re looking for a ridiculously easy way to incorporate more fruits and veggies into your diet and actually crave veggies, (yes! For realz! I crave bowls of broccoli!?) you’re in for a real treat.

Green smoothies for me, have been what Jen and Jadah say “a gateway drug” to healthier eating and that’s exactly what’s happened for my family.

Organic foods have always been important to me since having my first kiddo eight years ago.

But, let’s get real. Life is busy. And asking kids to munch on salads all day long is highly unlikely.

That’s where Jadah comes in.

She and I met through a moms group a few years ago and we soon became good friends. I even got to work behind the scenes to watch these amazing two ladies create the incredibly successful website SimpleGreenSmoothies.com

I had no idea what a green smoothie was, but at the time, my family was going through a huge bout of the flu and we were desperate to stop the cold and flu season as we got it HARD every year.

My kids were super skeptical, as was I, but we started drinking these on a regular basis and the whole family became tolerant and (dare I say) enjoyed them!

Fast forward to today, we drink green smoothies just about everyday (check out the 30 Day Green Smoothie Challenge if you LOVE community and accountability partners — they’re 1 million strong!?) Super fun and tasty recipes to inspire you to drink your greens.

What’s even better? My kids LOVE and ask for kale chips? Woohoo! Score for mom!!

And for dinner, sometimes I’ll just eat a huge bowl of Lemony Garlic Broccoli and actually crave this during the day. I know, it’s crazy.

I’m super excited to share this awesome recipe straight outta their awesome book!

Serves 2
2 cups fresh spinach
1 cup unsweetened coconut water
1 orange, peeled
2 cups mango
1 cup pineapple
Juice from 1/2 lime, plus lime slices to garnish
Coarse salt to rim your glass, optional
1. Blend spinach, coconut water, and orange until smooth.
2. Add mango, pineapple and lime juice and blend until smooth.
3. Rub rim of your glasses with a lime and dip into coarse salt, if using.
4. Pour green smoothie into glass and ENJOY!
Ps — use 1 frozen fruit to make your drink nice and cold instead of using ice.
