Ooey Gooey Chocolate Brownies

Makes: 6 servings
Prep: 10 minutes
Cook: low heat—3 to 3½ hours

¾ cup melted butter, plus additional butter to grease foil
1½ cups sugar or coconut sugar
⅔ cup unsweetened cocoa powder
⅓ cup all-purpose flour or almond flour
2 tablespoons coconut flour (omit if using all-purpose flour)
3 eggs, lightly beaten
1 tablespoon coconut oil
1 teaspoon pure vanilla extract
½ teaspoon salt
½ cup chocolate chips


1. In the slow cooker pot, cover the entire bottom and up the sides about 2 inches with a large piece of foil. Grease the foil with butter to prevent sticking.

2. In a large bowl, whisk together all ingredients except chocolate chips. When just combined, fold in chocolate chips.

3. Pour into slow cooker and smooth out so batter is even on top. Cook on low heat for 3 to 3½ hours, or until the sides are set but the middle is slightly gooey.

4. To serve, scoop brownie into a big bowl and top with your favorite ice cream. Enjoy!

  1. ON A BUDGET? — Got some serious cash flow probs? And think you can’t cook a healthy meal? Think again. One of the best reasons to use a slow cooker is that you can use the inexpensive, aka tougher, cuts of meat and let the magic happen in your slow cooker. It allows the meat to cook low and slow, turning these cuts into delicious melt in your mouth meals without the high costs. And I mean, come on. How expensive is a pound of beans or rice?
  2. PICKY EATERS? — If you’re constantly trying to please the picky eaters in your house, the slow cooker will be your new bestie. You can pack a ton of veggies into silky sauces and stews along with a nice protein that please a whole crowd.
  3. NO SLOW COOKER!? No problem! — You don’t have to buy the most expensive slow cooker out there. You can buy an inexpensive one at Costco for under $40. Or, if you’re not a member, get the one I use on Amazon here.
  4. STRAPPED FOR TIME? — If you’ve got 10-15 minutes, you’ve got the time it takes to bust out an amazing meal.
