Sweet N’ Spicy Chicken

Ever open the fridge at 6pm and ask what’s for dinner? Yep. That was my life for the first couple of months after having Legend. When I had him in May, life was completely turned upside down, as any new parent can attest to. Dinner consisted of tacos, cereal and salads. Ha!

Since he’s three months old now, we are actually sleeping – say, what?! – well, a little.

We’re also doing more meal planning which helps out the week tremendously. It takes a little prep and thought on the weekend and you’ve got your stuff all ready to go come Monday.

But, now that things are getting back into the swing of things, we’re trying to plan and make things fun again.

Do you struggle with getting dinner on the table in a flash?

If so, you need a few go to recipes that are quick and easy and take minimal time to prep.

I try to plan as much as I can during the week but let’s face it. Sometimes things don’t always go as planned. Or sometimes you just want to take the night off and skip cooking when it’s roasting hot outside.

Here’s a fun recipe I got from Whole Foods and tailored it to what we had on hand one night and it’s become a favorite of my kiddos.

Sweet and Spicy Chicken
Serves 4

Prep time 5 minutes

Cook time 20 minutes


  • 1 pound chicken drumsticks or thighs, organic preferably
  • 1/2 cup orange marmalade or apricot preserves
  • couple good shakes hot sauce (Cholula is my favorite brand but Sriracha is another good one)
  • salt and pepper


  1. Preheat oven to 400 degrees. Stir together marmalade/preserves and hot sauce. Set aside.
  2. On a baking sheet lined with foil or parchment for easy clean up, place chicken on pan and season with salt and pepper.
  3. Roast chicken for about 20 minutes until almost cooked through. Pull chicken out of oven and spread on marmalade mixture on all sides.
  4. Place chicken back in oven and cook for another 5-8 minutes until golden brown and cooked through. You can tell when chicken is cooked through when you pierce the meat and the juices run clear – no pink or red. 
  5. Put chicken on a serving platter and enjoy!
